PS Newbie Question: Selective Coloring Layers

I apologize for the completely asinine question. I tried googling, checking the mems, etc., but couldn't find my answer.

I just started using Photoshop 7. I love all the tutorials you all post, but I don't know what you're using to make the "selective coloring" layers. I assume this is more of a technique than the name of an actual color adjustment, or else I'd be able to see something saying "selective coloring" in the menus.

Specifically, I don't know what is used as the selective coloring layer, in say, skankzila's tutorial that says:

Reds
Cyan: -100
Magenta: 0
Yellow: 0
Black: +50

Again, apologies for the incredibly preschool-esque question. PS newbie. :)

border/frame-type textures

I have quite a few textures like these ones, but I can't figure out how to use them so that the black shows up, but the white doesn't. 

Example (texture haphazardly made by me, so no credit):



I know that screen works to get the white part to show, but I can't figure out how to get it to the other way around.

Help making newspaper-type textures in PS CS3

Hi everyone I have a somewhat simple question. I'm trying to make newspaper type textures to use in several graphics I need to make by next week.  However whenever I try to make them they turn out, well not well. And the textures I find on line have that watermark on them and for the life of me I can't get them off without making them look horrible.

Any suggestions or tutorials out there?? I've looked already and couldn't find anything so any help would be great.
